The Best Strawberry Lemonade Muffins

These sweet and tangy strawberry lemonade muffins make the perfect quick breakfast or afternoon treat for Spring and Summer! The sweet flavor of fresh strawberries mixed with the zingy taste of lemon zest make this recipe one that you will come back to again and again. We make these muffins on repeat every year as soon as the weather starts warming up!

Every year in the spring we take at least one trip to a local strawberry patch and pick our own strawberries. These strawberry lemonade muffins are one of the recipes we always look forward to making with our fresh picked berries. They are truly a favorite in our home this time of year. My boys get so excited and love to help me make them for breakfast or an afternoon treat. You really can’t beat the strawberry and lemon combination for a refreshing springtime snack. Sometimes we like to top them with a sprinkle of powdered sugar for a little added sweetness.

This recipe actually came about by accident a couple of years ago. My son had asked for blueberry muffins for breakfast, but we were out of blueberries. We had plenty of strawberries that needed to be used and if you know me, or follow me on instagram, you probably know that I’ll put just about any fruit in a muffin or quick bread to keep it from going to waste. We decided to give strawberry muffins a try and they ended up being a hit! The next time I made them is when I had the idea to add lemon. They have been a favorite ever since! Now, lets jump in to how to make them.

Ingredients

Flour – I typically use unbleached all purpose flour, but you can also substitute einkorn flour 1:1 (read more about einkorn flour in my Dutch Baby Pancake post).

Butter – Salted or unsalted both work just fine.

Milk – We usually have whole milk on hand, but most any kind of milk will do.

Fresh Strawberries – I have tried this recipe with frozen strawberries as well, and definitely prefer fresh. If you do use frozen, reduce the amount of milk by about a tablespoon.

Lemon zest and juice – A medium size lemon is what I usually use.

How to make Strawberry Lemonade Muffins

1. Before you start mixing ingredients, preheat your oven to 375.

2. Add butter and sugar to a medium mixing bowl and mix with a hand mixer until well combined.

3. Next, mix in eggs and vanilla.

4. Add dry ingredients and milk and mix well until batter is smooth.

5. Using a spoon, fold in strawberries, lemon zest and lemon juice.

6. Distribute batter evenly to make 12 muffins in lined muffin tin.

7. Bake for 20-25 minutes or until toothpick comes out clean.

  • 1 1/2 Cups All purpose flour
  • 1/4 Cup Butter softened
  • 1/2 Cup Milk
  • 3/4 Cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/2 tsp salt
  • 1 tsp Baking powder
  • 1 Cup Strawberries sliced
  • 1 lemon Zest
  • 1/2 lemon Juice

Method
