In my opinion, you can’t go wrong with brownies. Especially when they are fudgy and chewy like these! They are so delicious by themselves or topped with homemade vanilla ice cream. These are usually my go to to have on hand when guests are coming over. They are simple to make and set out on the counter for an easy to grab treat. They are also my husband’s favorite!
This recipe was one of the first I started experimenting with when I started milling my own flour. I feel like using fresh flour, with all of its health benefits, helps balance out the sugar and pushes baked goods a little closer to the healthy side. While they are obviously not a health food, I do feel that using high quality ingredients is important no matter what you’re cooking or baking.
The flour in these can be substituted 1:1 with all purpose flour, however, using freshly milled flour in these brownies definitely gives them an elevated taste and texture.
Benefits of freshly milled flour
I could write an entire blog post about the benefits of milling your own flour, but for now, here are a few of the top reasons I chose to purchase a grain mill and learn to bake with flour milled at home.
- Nutrient density – Freshly milled flour is just that. Freshly milled. It doesn’t have time for its nutrient value to decrease before it is used and consumed. This means that you are getting a lot more vitamins and minerals from fresh milled flour than you would from store bought flour.
- Easily digested – Freshly milled flour contains enzymes that help break down gluten. This makes it more easily tolerated and digested, even for some people with gluten intolerance.
- Flavor – There is a distinct difference in the flavor of freshly milled flour compared with store bought flour. The freshness adds a rich taste to any recipe it is added to.

Ingredients for brownies made with freshly milled flour
- 1/2 cup butter, softened – You can use salted or unsalted butter for this recipe. I usually use salted because it’s what I tend to have on hand.
- 1 tbsp avocado oil – you can easily substitute with a different kind of oil such as olive or coconut oil. I find that avocado oil works well because it is a very neutral oil. It helps give the brownies a chewy texture without altering the flavor.
- 1 1/4 cups granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/3 cup freshly milled flour – flour milled from soft white wheat berries works well for this recipe. You can find a wide variety of wheat berries here.
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chocolate chips – I like to use a combination of milk and dark chocolate. Use extra to sprinkle on top before baking if desired.

To Make
- In a medium bowl, combine butter, avocado oil and sugar. Mix until smooth
- Add eggs and vanilla and beat with a whisk or hand mixer until batter begins to look fluffy

- Add flour, cocoa powder, baking powder and salt and mix until well combined
- Last, fold in chocolate chips

- Pour batter into a buttered or parchment paper lined 8×8 glass pan
- Bake at 350℉ for 30-35 minutes, or until toothpick comes out clean

- Allow to cool before slicing, if you can wait that long!

Baker’s Notes
- For this recipe, you can easily substitute the freshly milled flour 1:1 with all purpose flour, however, using freshly milled flour in these brownies definitely gives them an elevated taste and texture.
- If you find that the brownies turn out flat, or the texture is not as fluffy as you would like, try mixing the batter and letting it set while the oven preheats. This gives the flour time to absorb the liquid and can improve texture and flavor.
- If you do not have a grain mill, you can grind wheat berries in a food processor. It takes a little time to get the flour ground fine enough, but it can be done.
- I find that for recipes that don’t need to develop glutin, soft white wheat berries work best.
