These light and fluffy blueberry muffins with streusel topping are so delicious and easy to make. Paired with the buttery and sweet flavor of the streusel topping, they are perfect for a quick breakfast or snack. These are a go to in our home, especially during blueberry season!

For the past two summers we have been blessed to be able to go to a family friend’s house and pick blueberries. She has several bushes and always has an over abundance of berries that she happily shares with neighbors and friends! We have picked enough to stock the freezer, and have plenty left over to bake with and snack on. It is becoming such a sweet and special summertime tradition to go pick berries!
These blueberry muffins with streusel topping have been requested on repeat by my 6 year old and 3 year old this summer. I love whipping up a batch for a quick simple breakfast. They are also great for an afternoon snack that is sweet but still on the healthy side. They have a light and fluffy texture and the recipe comes together with ease. These as well as our favorite strawberry lemonade muffins have been our go to’s all summer.

Ingredients
To make these easy blueberry muffins with streusel topping, you will need:
- 1 1/2 cups all purpose flour (I love to buy organic all purpose flour as well as organic wheat berries here)
- 6 Tbsp butter, melted
- 1/2 cup whole milk
- 3/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 cup blueberries, fresh or frozen
For the streusel topping:
- 1/4 cup flour
- 1/4 cup brown sugar
- 2 tbsp butter, melted

How To Make Easy Blueberry Muffins With Streusel Topping
To make the batter:
- In a medium size mixing bowl, combine melted butter and sugar and mix with a whisk
- Add in eggs and vanilla extract and mix vigorously until batter starts to look airy and slightly fluffy
- Next, add the dry ingredients (flour, salt, baking powder) and mix just until incorporated
- Add milk and mix batter until smooth
- Last, fold in the berries and distribute batter evenly in a muffin pan with 12 muffin liners
To make the streusel topping:
- Combine the flour and brown sugar in a small bowl
- Add in melted butter and mix until crumbly (I like to use a fork to mix the streusel topping)
- Distribute evenly over top of the 12 muffins before baking
To bake the muffins:
- Have your oven preheated to 375
- Bake muffins at 375 for 20-25 minutes, or until a toothpick comes out clean
- Remove muffins from pan as soon as they’re cool enough to handle without getting burned
- Enjoy!
