Easy Blueberry Muffins With Streusel Topping

Ingredients
  

  • 1 1/2 cups flour
  • 6 tbsp butter melted
  • 1/2 cup milk
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 cup blueberries fresh or frozen
Streusel Topping
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 2 tbsp butter melted

Method
 

To make the batter:
  1. In a medium size mixing bowl, combine melted butter and sugar and mix with a whisk
  2. Add in eggs and vanilla extract and mix vigorously until batter starts to look airy and slightly fluffy
  3. Next, add the dry ingredients (flour, salt, baking powder) and mix just until incorporated
  4. Add milk and mix batter until smooth
  5. Last, fold in the berries and distribute batter evenly in a muffin pan with 12 muffin liners
To make the streusel topping:
  1. Combine the flour and brown sugar in a small bowl
  2. Add in melted butter and mix until crumbly (I like to use a fork to mix the streusel topping)
  3. Distribute evenly over top of the 12 muffins before baking
To bake the muffins:
  1. Have your oven preheated to 375
  2. Bake muffins at 375 for 20-25 minutes, or until a toothpick comes out clean
  3. Remove muffins from pan as soon as they're cool enough to handle without getting burned
  4. Enjoy!
