Strawberry Lemonade Muffins

These sweet and tangy strawberry lemonade muffins make the perfect quick breakfast or afternoon treat for Spring and Summer! The sweet flavor of fresh strawberries mixed with the zingy taste of lemon zest make this recipe one that you will come back to again and again. We make these muffins on repeat every year as soon as the weather starts warming up!

Ingredients
  

  • 1 1/2 Cups All purpose flour
  • 1/4 Cup Butter softened
  • 1/2 Cup Milk
  • 3/4 Cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/2 tsp salt
  • 1 tsp Baking powder
  • 1 Cup Strawberries sliced
  • 1 lemon Zest
  • 1/2 lemon Juice

Method
 

  1. Preheat oven to 375
  2. Add butter and sugar to a medium mixing bowl and mix with a hand mixer until well combined
  3. Mix in eggs and vanilla
  4. Add dry ingredients and milk and mix well until batter is smooth
  5. Using a spoon, fold in strawberries, lemon zest and lemon juice
  6. Distribute batter evenly to make 12 muffins in lined muffin tin
  7. Bake for 20-25 minutes or until toothpick comes out clean
