Method
- Preheat oven to 375
- Add butter and sugar to a medium mixing bowl and mix with a hand mixer until well combined
- Mix in eggs and vanilla
- Add dry ingredients and milk and mix well until batter is smooth
- Using a spoon, fold in strawberries, lemon zest and lemon juice
- Distribute batter evenly to make 12 muffins in lined muffin tin
- Bake for 20-25 minutes or until toothpick comes out clean
